This is the first high fiber bento I packed for her when she started high dose of steroid. Because she get hungry real fast, so high fibre diet can keep her filling as long as possible.

Bento: Potato Salad

This high fibre potato salad is good to keep you full longer. Bran, when digested, slows down the sugar assimilation and removes calories from the body by reducing the absorption of dietary fat, while keeping your blood sugar levels low and stable.

Ingredients

  • 1 pcs potato
  • 2 tbsp kidney beans
  • 1/2 tsp bacon bits
  • 1 tbsp raisins
  • 1 tsp bran
  • 2 tsp chia seeds
  • 1 tsp olive oil

Instructions

  • Peel the potato skin and cut into small cubes and placed it into a pot of water. Add 1/2 tsp of salt to the water. Turn fire to high and boil potato till soft. 
  • Mixed all ingredients together except for chia seeds.
  • Sprinkle chia seeds on top with olive oil and a bit of Himalaya salt.
